This 2021 vintage of our Viognier Wild Ale was made with grape pomace that we got from our friends at Charlie Echo Wine.
Viognier grape hast the scent of Honeysuckle and Jasmine and the rich flavors of Apricot and Peach. Ripening in warm sunshine, this beer is quite heady and exotic with spicy undertones of Gingerbread and plenty of body.
We placed these grapes on our golden ale that aged in oak barrels for 12 months. The beer then undergoes a secondary fermentation on the viognier pomace. The wild yeast from the grape skins adds an extra level of funk and flavor.
