Patiently aged in our oak foeders, this blend develops beautiful layers of bright citrus, subtle orchard fruit, earthy farmhouse character, restrained acidity, and delicate Brettanomyces funk. Rather than overwhelming the palate with sharp sourness, the acidity is balanced and refined, allowing notes of fresh lemon zest, white peach, wildflower honey, cracked pepper, oak, and a whisper of rustic earthiness to shine through.
