This Golden Sour Ale is a blend of select barrels aged between 9 months and 2 years. It is a favorite blend of ours and one we had to package without adding any fruit. With a light acidity and earthy funk it is great for the sour fanatic and someone just getting into the style.

We then add an assortment of hops.  The result makes your brain do a backflip.  The familiar smell of hops quickly gives way to the tartness of the golden ale.

Nebbiolo Wine Grape Sour

Introducing our Nebbiolo Wild Ale.

The Nebbiolo grape has a deep color violet color and bold tannins.  Despite its tannic structure, this beer’s fruity flavors of cherry and raspberries are supported by aromas of rose and anise, which always seem to shine through.  Nebbiolo can be herbaceous with more sour cranberry fruit, rose hip, and leather and red clay minerality.   However, those willing to take a risk with this dark and rich vino grape are in for a pleasant surprise.

We placed these grapes on our golden ale that aged in oak barrels for 12 months.  The beer then undergoes a secondary fermentation on the wine grapes. The wild yeast from the grape skins adds extra funk and flavor.  We love our wine grape sours.  Once you try them, you will immediately know why.

Fermented with a strain of yeast from the Old World colonies and matured in a singular, sentient oak vessel, this golden elixir crackles with energy. Notes of starfruit, white pepper, and dried Terran herbs radiate from the glass, while the aroma of distant orchards lingers like the memory of a forgotten system.

Each sip reveals a layered universe: tart apricot comets streak across a nebula of lemon zest, followed by a gravitational pull of honeyed malt and a subtle funk that echoes like cosmic static. The foeder’s influence adds soft tannins and a velvety mouthfeel, grounding the ethereal effervescence in something tactile—something real.

Experience a harmonious blend of unique and innovative flavors with our Experimental Saison #1, a special collaboration with OB Brewery. This exceptional brew combines the distinct characteristics of our Diabolical Saison and Neighborhood Saison, resulting in a delightful fusion that is both familiar and intriguingly novel.

Diabolical Saison: Our Diabolical Saison is crafted with Spelt grain, offering a soft, slightly sweet, and nutty flavor profile with spicy undertones. This delightful grain complements the classic Saison yeast strain we use, which introduces subtle notes of clove, white pepper, and coriander, enhancing the beer’s complexity and depth.

Neighborhood Saison: The Neighborhood Saison brings a different character to the blend, made with Rye grain for a peppery kick. The clean fermentation process allows the grain’s natural flavors to shine through without the influence of barrel aging, adding a crisp and refreshing dimension to the beer.

The Blend: Together, these two Saisons create a balanced and captivating brew that showcases the best of both worlds. The spiciness from the Diabolical Saison melds beautifully with the peppery notes of the Neighborhood Saison, resulting in a Saison that is both bold and smooth.

Funky Barrel Golden Sour

This Golden Sour Ale is a blend of select barrels aged between 9 months and 2 years. It is a favorite blend of ours and one we had to package without adding any fruit. With a light acidity and earthy funk, it is great for the sour fanatic and someone just getting into the style.
