Some beers take their time… and this one spent a long stretch Berry’D Alive. Inspired by the relentless energy of the Phish instrumental “Buried Alive,” this tart saison spent two full years aging in oak puncheons, slowly developing layers of funk, brightness, and farmhouse complexity before we woke it up with a fresh addition of ripe blackberries and raspberries.
The base saison brings classic farmhouse character—peppery spice, soft oak tannins, and a dry, rustic finish—while the long puncheon rest builds subtle notes of earthy wild yeast, gentle acidity, and oak structure. Then the fruit kicks in like the opening riff of the song: juicy blackberry depth, bright raspberry tartness, and a vibrant berry aroma that jumps right out of the glass.
The result is a beautifully balanced wild ale that’s lively, layered, and refreshingly tart, with deep ruby color and a complex finish that keeps unfolding sip after sip.
